You want to eat Sawayaka's famous hamburg steak at Gotemba Premium Outlets. Then you check the wait time and see 5 to 7 hours. That gut-drop feeling? Pretty much everyone who's tried to eat here on a weekend knows it.
Sawayaka's Gotemba Outlet location is one of the few branches easy to reach even if you're not from Shizuoka, so fans travel in from all over. On weekends and holidays, the ticket line is already long before the restaurant even opens.

The genkotsu hamburg — cut open right at your table. The moment it's split open, the juices pour out.
I've been recording the ticket machine's screen every single day since May 2023 — weekdays at 10am and 12pm, weekends and holidays at 10am and 11am. That data is what this guide is built on: which day is genuinely quiet (spoiler: Thursday), and what time you actually need to show up on a long weekend.
Below you'll find how the ticket system works, parking, the menu worth ordering, and a backup plan for when the line is just too long.

Why People Line Up for This Hamburg

Sawayaka is a Shizuoka-based hamburg steak chain. Its signature genkotsu hamburg is made from 100% ground beef, grilled over charcoal, and cut in half right at your table by staff — the juice runs out the moment it's split open, and it's genuinely a good show.
At 250g, it's a full meal for lunch or dinner. Prices sit around family-restaurant level, which makes the quality feel like a steal.
There's a kids' area, so it works for families as well as couples. Service is attentive without being fussy — you can just relax and eat.

The dining room fills up fast on weekends — the ticket system is really the only way to manage the wait.
How the Ticket System Works — With a Year of Real Data
The first step is getting a ticket from the machine just inside the entrance. Tickets start at 9am — but on weekends, the line is already long by the time the machine turns on.
How to get your ticket
Get to the parking lot early (aim for the 8am opening on weekends)
Gotemba Outlet's parking lots open at 8am. On weekends and holidays, get in right at 8 and head straight for Sawayaka. P4, in the HILL SIDE zone, is closest.
Take a ticket from the machine at the entrance (from 9am)
The ticket machine is just inside the entrance. Each ticket has a barcode — scan it with your phone to check your place in line in real time.
Go shop while you wait
Once you have a ticket, you're free. When the screen turns blue and says "please come to the store," that's your signal. Spend the wait browsing the outlets.

The line before 9am. On long weekends, you may need to be here by 8:30 just to get a ticket at all.

Scan the barcode on your ticket to track your number from your phone.

When the screen turns blue and reads "please come to the store," it's time to head back.

How Reliable Is This Data?
Since May 2023, I've logged the ticket screen every day — weekdays at 10am and noon, weekends at 10am and 11am. With months of data stacked up, these estimates hold up better than a single visitor's one-off experience.

A daily log of the ticket screen, month after month, is what these estimates are built on.
What to Order
Once you've got a ticket, it's worth planning your order. Check Sawayaka's digital menu while you wait so you can order fast once seated.
Genkotsu Hamburg (the signature dish)

This is what Sawayaka is known for. A 100% ground-beef patty, grilled over charcoal, cut open at your table. The juice that spills out the moment it's cut is the whole point — first-timers usually gasp a little. At 250g for around ¥1,500, it's a lot of food for the price.
Onigiri Hamburg

A slightly smaller 200g version of the genkotsu, popular with women and anyone who doesn't want the full-size portion. Order it medium — well-done loses a lot of the juiciness that makes this dish worth ordering.
Hamburg with Grilled Vegetable Curry

Charcoal-grilled hamburg and a spicy curry on one plate. The combination of juicy meat and rich curry works well, and it's a favorite for kids and curry fans alike.
Japanese-Style Hamburg

A lighter, soy-based sauce over the same charcoal-grilled patty. Good if you're not in the mood for something heavy — the smoky char and the soy flavor pair better than you'd expect.
Bite-Size Steak

Don't overlook the steak. It's charcoal-grilled and served bite-size, easy to share, and great with grated daikon and ponzu. Plenty of people order it alongside a hamburg.

Getting There and Parking

Sawayaka sits at the far end of the HILL SIDE zone. P4 is the closest lot.
By car
About 10 minutes from the Gotemba IC or Ashigara Smart IC on the Tomei Expressway. P4 is closest to the HILL SIDE zone where Sawayaka is, followed by P7 and P5. Lots open at 8am.
- Lots open at 8am. On weekends, get in right at 8 and go straight for Sawayaka.
- P4, P5, or P7 all work fine — the walking difference is only 2–3 minutes.
- In the multi-level lots, the upper floors empty out faster. Head straight up instead of circling the lower levels.
If you don't mind a short walk, P2 on the WEST ZONE side and up the hill can sometimes get you near the front of the line.
By train or bus
Free shuttle buses run from JR Gotemba Station and get you to the outlets in about 15 minutes. Direct buses from Tokyo and Nagoya are also an option. Since Sawayaka's tickets often sell out by around 11am on weekends, it's worth choosing whichever option gets you there earliest.
A Backup Plan: Other Sawayaka Locations Nearby
If the outlet location's tickets are gone, or it's already evening, there's another option — the Gotemba Inter branch, just a short drive away, is a solid backup.

You can check real-time wait times across all Sawayaka branches on their reservation site.
| Branch | Location / access |
|---|---|
| Gotemba Inter branch | 984-1 Higashitanaka, Gotemba, Shizuoka — about 8 min by car from the outlets |
| Nagaizumi branch | 340-5 Nakatsuchikari, Nagaizumi — about 5 min from Nagaizumi IC |
| Kannami branch | 130-1 Kamisawa, Kannami — 2 min from Oba-Kannami IC on the Izu Chuo Expressway |
| Fuji Takaoka branch | 847-11 Hisazawa, Fuji — about 8 min from the Shin-Fuji IC |
If the outlet branch is done issuing tickets, put your name in at the Gotemba Inter branch first, then head to the outlets — shop through the wait and swing back when it's your turn.

Visitor Reviews
Here's what real visitors had to say about their trip to Sawayaka.
■ GOOD REVIEWS
We grabbed a ticket at 10:30 on a Thursday and were seated by about 11:40. I had no idea weekdays were this smooth. Watching them cut the hamburg open at the table got an actual gasp out of both of us — the juice is no joke, and the price feels way too low for what you get.
I shopped the outlets after getting my ticket and just checked my number on my phone the whole time — it honestly didn't feel like waiting at all. When my number was close, the app basically told me when to head back.
We came with our kids and the kids' area kept them entertained the whole time. We ordered both the Japanese-style and the genkotsu hamburg and loved both. At around ¥1,500 a plate, the value is honestly a little ridiculous.
We got to the outlets in the morning and pulled ticket #92 at 9:24 — about a 4-hour-20-minute wait. We spent it shopping, and eating that hamburg in the evening felt like a real reward. Watching them cut it open right at our table was genuinely a moment.
■ Worth Knowing Before You Go
At 11:20 the wait was already over 7 hours, which pushed us straight into dinnertime. If you're going on a long weekend, get there early — and have a backup restaurant in mind in case tickets run out. (Tip: check the nearby Gotemba Inter branch as a fallback.)
I ordered mine well-done and it lost a lot of the juiciness that makes this dish special. If it's your first time, go with medium — that's what the staff recommend, and they're happy to explain the options if you ask.

Tax-Free Shopping While You Wait
Since you'll likely have a few hours to kill before your table is ready, it's worth knowing that most stores at Gotemba Premium Outlets offer tax-free shopping for international visitors. Spend over a set amount at a single store (usually around ¥5,500) and show your passport at checkout or the tax refund counter to skip Japan's 10% consumption tax. Bring your passport with you — it's required for every tax-free purchase.
